Technical Data Sheet
Description
Cyclic Saturnales 75cl is a Christmas beer crafted to celebrate the season with intensity, depth, and a marked artisanal identity. This special batch combines a blend of toasted malts (Biscuit and Roast 1500) with a double process: half of the wort was aged for three months in barrels, while the other half was infused with loquats from the family orchard, Sicus raisins, and wild Calamintha. The result is a warm, dark, and aromatic beer, where ripe fruit, natural spices, and a malty character unite in an experience perfect for the festivities.

Character, Flavor, Aromas:
On the nose, it offers a complex profile dominated by notes of toasted malts, sweet bread, ripe fruit, and a delicate herbal background provided by the Calamintha. On the palate, it displays a medium-high body and an enveloping texture, with prominent flavors of dark caramel, raisins, figs, and stone fruit, accompanied by the depth provided by months in barrels. The presence of loquat adds freshness and an unusual fruity nuance, while the partial aging generates a subtle liquorish and spicy touch that rounds out the drink. The finish is warm, long, and perfect for accompanying winter gatherings.
Culinary Pairing:
Cyclic Saturnales 75cl pairs extraordinarily well with traditional roasts, mild game meats, aged cheeses, spiced pâtés, and typical Christmas desserts such as panettone, yolk nougat, or winter puddings. It is also a great choice to accompany high-percentage dark chocolates or to enjoy on its own during a quiet after-dinner conversation.
Deeply seasonal, ideal for those seeking authentic, artisanal flavors full of festive spirit.
