Alcohol Content: 7.5% ABV
Serving Temperature: 8 – 12 °C
Color (EBC): Bright ruby-pomegranate with natural haze
Bitterness (IBU): Very low, subordinate to acidity and fruit
Character, Flavor, Aromas:
Profile dominated by fresh raspberry and crisp red berries, accompanied by a light citrus layer, pale honey, and a very subtle hint of vanilla from the barrel. Clean floral and herbal notes appear. On the palate, it is dry and acidic, with notes of redcurrant and pomegranate, light skin and seed tannins that provide structure, light-medium body, and a lively carbonation that refines the overall experience. The finish is long, clean, and persistent, with a return of red fruit, a balsamic echo from the wood, and a mineral dryness that invites another sip.
Culinary Pairing:
Perfect with warm goat cheese accompanied by honey and walnuts, where the acidity cuts through the fat and the fruit enhances the dairy profile. Shines with roasted beet salads, citrus, and herbs, as well as duck magret with a red berry reduction. For a sweet finish, it pairs exceptionally well with baked cheesecake or cheesecake with raspberry coulis, creating a refined balance between acidity and sweetness.
