Abbey Ale

Abbey Ales are monastic-inspired beers that uphold the Belgian tradition of brewing abbeys without strictly belonging to the eleven official Trappist ones. They reproduce the style and recipe of monastery beers, often under license from a religious order, or as a tribute to the school that for centuries has defined the most complex top-fermented beers in the world.

In the glass, they display colors ranging from deep gold to dark mahogany, with dense and persistent heads. On the nose, they develop fruity esters of pear, banana, apple, and dried fruit, along with spiced notes, clove, honey, and caramel. On the palate, they are round, with a medium to full body, a malty sweetness well-balanced by lively carbonation, and a warming alcohol content (generally between 6% and 9%) that is perceptible but never harsh.

They are brewed with Pilsner and caramelized malts, Belgian candy sugar to boost alcohol without increasing body, subtle European hops, and, above all, highly expressive Belgian yeasts that provide their distinctive aromatic signature. They are usually bottle-conditioned, which gives them fine effervescence and greater aging potential.

They are ideal beers to pair with game meats, aged cheeses, stews, or chocolate-based desserts. They should be served between 8 °C and 12 °C in a chalice glass, which helps concentrate the aromas. In this collection, we have gathered references from Belgian producers and brewers from other countries who cultivate this tradition with respect and precision.
