Gose is a traditional German sour beer, originating from the town of Goslar and popularized in Leipzig over the centuries. It nearly went extinct in the 20th century and was revived thanks to the craft beer movement, which has turned it into one of the most reinterpreted sour styles in the world. Its hallmark is the unique combination of lactic acidity, salinity, and a citrusy touch of coriander that makes it unmistakable.
In the glass, it displays a pale straw-yellow color, typically cloudy, with abundant but short-lived white foam. On the nose, there are notes of citrus (lemon, lime), sourdough, coriander, a light mineral salinity, and a background of cereal and wheat. On the palate, it stands out for its vibrant yet gentle acidity, a salty touch perceived almost at the finish, low body, high carbonation, and an extremely refreshing finish. Bitterness is very low (5-15 IBU) and the alcohol content stays between 4% and 5.2%.
It is brewed with pilsner malt and a high proportion of wheat malt (more than 50%), a mixed fermentation with lactic acid bacteria and ale yeast, and the addition of salt and coriander during the process. Modern versions often incorporate fruits, spices, or flowers that integrate very well with the salty-sour base.
It is an extraordinary beer for hot days, ideal with oysters, seafood, sushi, ceviche, salads, fresh cheeses, or Asian dishes. It should be served very cold, between 4°C and 7°C, in a short, wide glass or a tulip glass. It is one of the most surprising and refreshing beers for those looking to move beyond the world of lagers and discover radically different profiles.
