The IPA (India Pale Ale) is probably the most representative style of the modern craft beer movement. Its origin dates back to 18th-century England, when heavily hopped Pale Ales were developed to withstand the sea voyage to British India. The 20th century almost saw its demise, but American brewers resurrected it in the 80s, reinventing it with their own hops and turning it into the flagship style of global craft beer.
In the glass, it shows a color ranging from deep gold to light amber, with a creamy head and good retention. On the nose, hops dominate with an immense palette depending on the varieties used: grapefruit, orange, mango, peach, passion fruit, pine, resin, fresh grass, or red berries. The malt provides a biscuit and caramel background that supports the hops without overshadowing them. On the palate, it has a medium body, with well-integrated malty sweetness, pronounced bitterness (40-70 IBU), lively carbonation, and a long, dry finish. The typical alcohol content is 5.5% to 7.5%.
It is brewed with pale and caramel malts, classic American hops such as Cascade, Centennial, Simcoe, Citra, Amarillo, or Mosaic in large doses during the boil and, above all, through dry hopping, and relatively neutral or slightly fruity ale yeasts.
It is a highly gastronomic beer: it pairs with burgers, ribs, Tex-Mex food, curry, pizzas, aged cheeses, or spicy dishes in general. It is served between 7 °C and 10 °C in a tulip glass, pint glass, or the modern IPA glass. In this collection, you will find classic American IPAs, West Coast IPAs, NEIPAs, and all the modern variants of the most influential style in craft beer.
