The Pale Ale is one of the oldest and most influential styles in brewing history. It originated in England in the 18th century thanks to the development of lighter malts (due to coke-fired kilns) and represented a revolution against the dark beers that had dominated until then. Today, very different schools coexist under the Pale Ale umbrella: the maltier and more balanced English version, the American (APA) with citrusy hops, and modern reinterpretations from all over the world.
In the glass, it displays a color ranging from light gold to soft amber, with a creamy, off-white head and good retention. On the nose, malt aromas dominate (biscuit, caramel, toasted bread), accompanied by floral, herbal, fruity, or citrus notes depending on the hops used. On the palate, it has a medium body, with a well-balanced malty sweetness, moderate bitterness (25-45 IBU), lively carbonation, and a relatively dry and inviting finish. The typical alcohol content ranges between 4.5% and 5.5%, making it a very sessionable beer despite its full character.
It is brewed with pale ale malts and some crystal or caramel malts to provide color and nuance, traditional English hops (Fuggle, Goldings) in the British version or American hops (Cascade, Centennial) in the American version, and ale yeasts that contribute light fruity esters.
It is an extremely versatile beer at the table: it pairs with burgers, grilled meats, chicken, pizzas, pasta, aged cheeses, or spiced dishes. It should be served between 8 °C and 10 °C in a pint glass or tulip glass. A style that no beer enthusiast can afford to miss.
